2 Tbsp. coconut oil (or olive oil)
3/4 cup diced onion
2-3 cloves crushed garlic
1 lb. ground meat of choice (I used a venison/pork combo)
2 cans of diced tomatos (I use Hunt’s with no salt added)
2 cans of chili beans (or beans of choice)
1 chipotle chili (or any chili you like. Add more for spicier chili)
1/2 tsp. dried Parsley
1/2 tsp. dried Basil
1/2 tsp. Cumin
1/2 tsp. Chili Powder
Sprinkle of cinnamon
Sprinkle of cocoa powder

NOTE: I rarely measure spices so the above amounts are estimates. I used chipolte chilis to give my chili a smoky flavor)

Heat the oil over medium high heat in a large pot. Add garlic and onion and saute for a minute or 2. Add ground meat and saute until browned. Lower heat to medium. Add tomatoes, beans, chili pepper. Stir. Then add the spices listed above and stir. Lower heat and simmer for about an hour. After that I turned off the heat and left it on the stove. I re-heated the chili when it was time for dinner.
