Asian Style Mahi Mahi
3 Tbsp. honey 1-2 cloves crushed garlic (to taste)
3 Tbsp. tamari (or soy sauce) 2 tsp. olive oil
3 Tbsp. balsamic vinegar 1 lb. of mahi mahi
1 tsp. grated fresh ginger salt and pepper to taste
In a shallow glass baking dish (I used Corning ware) stir together honey, tamari, balsamic vinegar, ginger, garlic and olive oil. Season fish with salt and pepper and place into the dish. Cover and refrigerate 20-30 minutes to marinate.
Preheat oven to 450 degrees. Drain the marinade into a saucepan. Lightly cover the fish with foil and bake at 450 degrees for 15-25 minutes depending on the thickness of the fish (fish should be opaque and flake easily).
While fish is cooking heat marinade over medium to medium high heat until the mixture reduces slightly to a glaze consistency.
Serve fish with marinade on top and your favorite vegetable or salad.
